Ingredients

  • 1 12" Boboli® Original Pizza Crust
  • 1 tsp. salt
  • 2 c. zucchini, 1/4" slices
  • 10 slices eggplant, 1/4" slices
  • 2 tbsp. olive oil
  • 1 c. shredded part-skim Mozzarella cheese, divided
  • 1/4 c. roasted red pepper, 1/4" slices
  • 1 tbsp. basil, fresh, coarsely chopped

Directions

Preheat barbecue fire. Lightly salt zucchini and eggplant. Brush with oil. Barbecue on both sides until tender. Place bread shell on grill. Sprinkle with 1/2 cup cheese. Top with vegetables, roasted red peppers, basil and remaining cheese. Cover and grill for 3 – 4 minutes. Enjoy!
