Gayle's Greek Pizza

  • 1 12" Boboli® Thin Pizza Crust
  • 1/4 c. olive oil
  • 1 red onion, sliced
  • 3 cloves garlic, chopped
  • 2 c. spinach
  • 1/2 c. feta cheese
  • 1/4 c. Parmesan cheese, grated
  • Pinch dried or fresh rosemary


  1. Preheat oven to 450° F. In a large skillet, heat olive oil. Add onions and 1/2 of the chopped garlic; season with dash of salt and pepper. Cook until fragrant. Remove ingredients and spread evenly on pizza crust. In same skillet, add a little more olive oil and the rest of the garlic. Add spinach and mix thoroughly. Season with salt and pepper. Let spinach wilt slightly. Remove and spread on pizza. Crumble feta cheese over pizza and then top with a sprinkling of Parmesan cheese. Bake for 8 – 10 minutes or until crust is golden brown. Top with fresh or dried rosemary.
