Summer Vegetable Pizza
Ingredients
1 12" Boboli® Original Pizza Crust
1 Large Eggplant
1/2 c. Mushrooms
1/2 c. Tomatoes
2 tbsp. Olive oil
1/4 c. Onions
1/4 c. Peppers
1/2 c. Zucchini
1 c. Asiago
Pinch Garlic
Pinch Basil
Directions
Preheat oven to 450° F.
Cook time 8 – 10 minutes
Peel and dice eggplant and squash. Dice pepper and onion. Slice mushrooms and tomatoes. Sauté eggplant and squash in 1 tablespoon olive oil for 5 minutes. Add remaining vegetables (except tomatoes). Add garlic. Sauté for an additional 3 minutes. Spread olive oil on crust. Place sliced tomatoes on crust. Cover with remaining vegetables. Top with cheese.
Alternate Methods
For 8" pizza crust, use 2/3 ingredients.
