Spaghetti Squash, Cheese & Tomato Pizza
1 12" Boboli® Original Pizza Crust
1/4 c. + 1 tbsp. grated Parmesan cheese
2 c. spaghetti squash, fresh, cooked, shredded from shell
1/2 c. part-skim Mozzarella cheese, cut into 1" cubes
1/3 c. tomatoes, canned, drained, coarsely chopped
1 tbsp. basil, fresh, coarsely chopped
Pinch nutmeg, ground
Salt and pepper to taste
Preheat oven to 450° F.
Cook time 8 – 10 minutes
Combine 1/4 cup Parmesan cheese with spaghetti squash, Mozzarella cheese, tomatoes, and basil. Salt and pepper to taste. Fill pizza crust leaving a 1" border. Bake for 8 – 10 minutes on a baking sheet in lower 1/3 of oven. Sprinkle with remaining Parmesan cheese prior to serving.
For 8" pizza crust, use 2/3 ingredients.
