Seasonal Couscous

Ingredients

1 12" Boboli® Original Pizza Crust
1 box Mediterranean couscous
2 shallots, diced
1 12 oz. can tomatoes, crushed
2 bell peppers, cut in 1/2
1 (4 oz) can tomato sauce
1 c. Parmigiano cheese, grated
1/3 c. olive oil

Directions

Preheat oven to 350° F.
Bake time: 5 – 7 minutes

Cook couscous, follow directions on box. Sautee shallots for 2 minutes, add tomatoes; heat for 2 minutes. Mix cooked couscous with shallots and tomatoes. In a bowl, place 1 cup hot water and your choice of sauce. Mix well. Add the couscous to the sauce and mix. Stuff 1/2 pepper with couscous and top with cheese. Brush crust with olive oil and top with remaining cheese. Bake pizza crust for 5 – 7 minutes or until golden brown. Cut into 2" squares.

Alternate Methods

For 8" pizza crust, use 2/3 ingredients.
