Onion Cheese Tart
Ingredients
1 12" Boboli® Original Pizza Crust
1 c. black olives, pitted
1 tbsp. + 3 tsp. olive oil, separated
2 c. onions, diced
1/2 c. chicken broth
1/4 c. white wine, dry
1 tbsp. parsley, chopped
2 tsp. anchovy paste
2 c. Gruyère cheese, shredded
Directions
Preheat oven 450° F.
Bake time: 8 – 10 minutes
Combine olives and 1 teaspoon of oil in a food processor or blender. Chop until a coarse paste is formed. Set aside. Sauté onions over medium heat in 1 tablespoon of oil until translucent. Add broth and wine. Simmer until almost dry. Toss with parsley. Brush anchovy paste, mixed with remaining oil, over top of pizza crust. Layer with onions, olives and cheese. Bake for 8 – 10 minutes on a baking sheet in the lower third of the oven. Cool slightly and serve.
Alternate Methods
For 8" pizza crust, use 2/3 ingredients.
