Grilled Eggplant Parmesan Pizza
1 12" Boboli® Original Pizza Crust
10 slices eggplant, 1/4" thick
2 tbsp. olive oil
3/4 c. tomato sauce
1 c. part-skim Mozzarella cheese, shredded
1 tbsp. Parmesan cheese, grated
1 tsp. basil leaves, dried
Preheat BBQ fire to medium – medium high.
Bake time: 4 – 6 minutes
Brush eggplant slices with oil and grill on both sides until tender. Grill pizza crust for 1 – 2 minutes on each side. Remove from grill and fill with tomato sauce. Top with eggplant slices and remaining ingredients. Cover and grill an additional 3 – 4 minutes on lower temperature. Serve hot off the grill.
For 8" pizza crust, use 2/3 ingredients.
