Chicken Curry Pizza
1 12" Boboli® Original Pizza Crust
1/2 plain yogurt, room temperature
2 tbsp. cream of coconut
1/2 tbsp. curry powder
1/3 c. onions, thinly sliced
1 clove garlic, minced
1/2 tsp. fresh ginger finely shredded
1 tbsp. olive oil
1 lb. chicken breasts, skinned, boned, 3/4" strips
1/2 c. apple, 3/4" pieces
1/4 c. chicken broth
1 tbsp. raisins
1/4 tsp. crushed red pepper flakes
1/2 tbsp. fresh cilantro, coarsely chopped
2 tbsp. sweetened coconut, shredded
Preheat oven to 450° F.
Bake time: 10 – 12 minutes
Combine yogurt, cream of coconut, and curry powder, mixing well. Set aside. Sauté onions, garlic, and ginger ingredients in oil until onions are translucent. Add chicken and sauté over medium heat until chicken turns opaque. Add apples, broth, raisins and red pepper. Simmer until liquid is slightly reduced. Remove from heat and let cool slightly. Add yogurt mixture and cilantro. Fill pizza crust leaving a 1" border around crust. Bake 10 – 12 minutes or until crust is golden and cheese is melted. Sprinkle with coconut.
For 8" pizza crust, use 2/3 ingredients.
