Carrot Cake
Ingredients
1 12" Boboli® Original Pizza Crust
8 oz. cream cheese, softened
1/2 tsp. vanilla extract
1/4 c. confectioners' sugar
1 1/2 c. granola cereal
1 c. carrot, finely shredded
1 c. mixed dried fruit, chopped
1 orange rind, finely chopped
1/2 tsp. ginger, ground
1/2 tsp. cinnamon, ground
1/4 tsp. cloves, ground
pinch nutmeg, ground
1/4 c. brown sugar
2 tbsp. flour
1 tbsp. butter
Directions
Preheat oven to 450° F.
Bake time: 8 – 10 minutes
Cream confectioners' sugar, cream cheese and vanilla using a mixer or food processor until smooth. Spread over pizza crust leaving a 1" border around crust. Combine granola cereal, carrot, mixed dried fruit, orange rind, ginger, cinnamon, cloves, and nutmeg. Spoon over cream cheese. Combine brown sugar, flour, and butter. Sprinkle over filling. Bake 8 – 10 minutes or until crust is golden brown. Let cool and enjoy!
Alternate Methods
For 8" pizza crust, use 2/3 ingredients.
