1 12" Boboli® Original Pizza Crust
1/2 c. onions, diced
1/2 c. carrots, diced
1/4 c. celery, diced
1 tbsp. butter
1/2 lb. ground pork, lean
1/4 lb. ground veal, lean
28 oz. tomatoes, canned, coarsely chopped
1/2 c. Italian red wine, dry
1 1/2 c. part-skim Mozzarella cheese, cut into 1/2" cubes
Salt and Pepper to taste
2 tbsp. grated Parmesan cheese
1 tbsp. Parsley, coarsely chopped
Preheat oven to 450° F.
Bake time: 8 – 10 minutes
Sauté onions, carrots and celery in butter in saucepan until crisp but tender. Add pork and veal. Sauté until it loses pink color; drain excess fat. Add tomatoes and wine. Simmer, uncovered, stirring occasionally until most of it is reduced, about 20 minutes. Add Mozzarella cheese stirring until almost melted. Salt and pepper to taste. Fill pizza crust leaving a 1" border. Sprinkle with Parmesan cheese and parsley. Bake 8 – 10 minutes on a baking sheet in lower 1/3 of oven. Cool slightly and serve.
For 8" pizza crust, use 2/3 ingredients.
