BJ's Boboli® Tuna Melt
1 12" Boboli® Original Pizza Crust
1/4 c. pine nuts
1/4 c. red onion, chopped
1/4 c. sun-dried tomatoes, drained and chopped
1/2 c. mayonnaise
2 hard boiled eggs, cooled and finely chopped (optional)
2 tbsp. pickle relish or 2 sweet pickles, finely chopped (optional)
salt and pepper to taste
1 tsp. Yellow mustard
2 c. fresh spinach leaves, rinsed and dried
1 c. Cheddar cheese or Monterey Jack cheese, shredded
Preheat oven to 450° F.
Bake time: 8 – 10 minutes
Roast pine nuts if desired. Place sun-dried tomatoes in bowl of hot water and rehydrate; drain and chop. Rinse spinach and pat dry with paper towel. Mix all ingredients except for spinach, cheese, and pizza crust. Spread mixture evenly on crust. Sprinkle cheese on top of tuna mixture. If serving warm, place in oven and bake 8 – 10 minutes or until cheese is melted. If serving as a cold salad, bake the crust 5 minutes, then spread tuna mixture & cheese on crust. Spread spinach leaves on top.
For 8" pizza crust, use 2/3 ingredients.
